Laverstoke Park Recipe Favourites:
Toad in the Hole
Provides approximately 4 servings
Ingredients
6 Laverstoke Park organic Cumberland pork sausages * or 6 Laverstoke Park organic Pork & Leek Sausages
2 tbsp olive oil
For the batter:
6oz/170g plain flour
2 large eggs
½ pint/300 ml semi-skimmed milk
salt and freshly milled black pepper
You will also need a solid-based, flameproof roasting dish (Le Creuset type is ideal)
with a base of 9”x6”/23cmx15cm, 2”/5cm deep.
Method
Preheat the oven to 220°C/425°F/Gas Mark 7.
1. Sieve the flour into a large bowl.
2. Add the egg, milk and salt and pepper.
3. Whisk until it is a smooth paste.
4. Pour the oil into the roasting dish and start to warm over a medium heat, adding the sausages so they begin to warm.
5. When the oil starts to shimmer, quickly pour in the batter and put immediately into the oven.
6. Cook for 30 minutes and serve immediately.
* Children might prefer Toad in the Hole made using our organic chipolatas in which case please allow 2 chipolatas per child. Use the recipe as above, carefully placing the chipolatas into the pan with the hot oil just before adding the batter so that the chipolatas do not overcook.
