Organic Chinese Pork

Method - Organic Chinese Pork (serves 6-8)

1/ First take all the ingedients for the marinade and mix them together blending well.

2/ Score the organic pork belly on both sides.

3/ Rub the marinade on to both sides of the meat making sure you get it deep into the scores.

4/ Wrap in cooking film and marinate for at least 12 hours (ideally 24 hours) in the refridgerator to ensure the marinade permeates the meat.

5/ Pre-heat an oven to 200°C (Gas Mark 7 / 390-400°F)

6/ Remove film and place pork in the oven on a wire rack suspended over a tray of water.

7/ Cook for 30 minutes to colour, then reduce the oven heat to 150-160°C (Gas Mark 3 / 300-325°F) and cook for 2 hours until tender.

To Serve Chinese Belly Pork

Cut the pork into thin slices and serve with a vegetable stir-fry. Equally at home with noodles or egg fried rice.

Wine suggestion: A dry white, such as Sauvignon Blanc, or white Orvieto. This dish also goes great with ale or lager.
