James Martin goes in pursuit of the best pork and along the way meets a couple of his favourite ‘food heroes’ – Martin Martindale and former World champion racing driver, Jody Scheckter,....
In the programme, James cooks a slow roast Belly of Pork in his own wood-burning stove, having poached it for an hour first. It was then roasted very slowly with a small amount of water and with assorted root vegetables along with a bay leaf, rosemary and thyme.
