We have established a dairy processing plant on the farm in order to make our own buffalo mozzarella, yoghurts and ice creams. We supply un-homogenised, pasteurised milk from our various milking animals which is packed on the farm.
About our Dairy Herd
As well as keeping water buffalo for meat we also have 200 milking buffalo which are well-known for producing mozzarella cheese. They are the most under-developed type of bovine They produce far less milk than even traditional cows but their milk has exceptional qualities such as a high solid content which make it excellent for cheese-making and other dairy products such as our ice creams. Buffalo milk is often used as a substitute for those with an intolerance to cow’s milk.
About Buffalo Milk
Buffalo milk is a totally natural product that can be consumed like any other milk. Time after time, participants in tasting trials select buffalo milk in preference to cows’, goats’ and artificially manufactured milks. They just love the taste!
Buffalo milk is very white, beautifully smooth, and an important source of protein and calcium. Unlike the array of industrially produced alternative milks, such as soya or other cereal milks, it is totally free of additives and chemical formulations. It is perfectly suited to making superb cheeses, yoghurts, ice creams and fantastic milk shakes!
In many cases people with aversions to cow’s milk can consume Buffalo Milk with no ill effect. However anyone wishing to use Buffalo Milk as a prophylactic should first seek medical advice.
