This is a classic warming recipe which we have changed slightly, in that it uses our lean buffalo mince instead of the traditional beef.
Buffalo Chilli Recipe Instructions
500g Buffalo Mince
One large onion – sauted
Two cloves of garlic – crushed
1 tsp chilli powder
100ml Beef stock
1 tbsp tomato puree
1 tin kidney beans
This is a very simple recipe.
1/ Start by browning the onions and garlic together being careful not to burn the garlic or you will get a bitter taste.
2/ Then add the mince and brown that too.
3/ Sprinkle with the chilli powder, and a little flour.
4/ Add the stock and tomato puree, and simmer on a very low heat for 15-20mins.
5/ Add the kidney beans about 15 mins before you are due to serve.
If possible it is best to leave it overnight, and re-heat gently the next day for maximum meaty chilli flavour, adding a little water if necessary. Enjoy with long grain, or whole grain rice, or as a delicious topping to a jacket potato.
Optional: To really bring out the chilli flavour add a few squares of organic dark chocolate just before removing from the heat and stir until it is melted and fully blended in. This gives a richer flavour to the dish.
