Recipe Beer Can Chicken

Recipe for Beer Can Chicken
Provides Approximately 4-5 Servings
Barbeque version:
- Take your chicken, season well on the inside and out.
- Open the can of beer, drop in the slices of ginger and garlic add a few splashes of soy sauce, you may need to tip a little of the beer out to fit everything else in!
- Open the cavity of the chicken, and insert the can, being careful not to spill.
- Put the chicken on the BBQ standing upright balancing on the can as a trivet, preferable cover with a lid or METAL bucket if using a Webber BBQ you need not worry.
- This takes approx 2 hours slow cooking, when near the end baste with plenty of oyster sauce and serve with savoury rice and a simple green salad and of course some more beer that is cold.
Oven version:
- Do all of the above, except put in the oven on about 150°C/300°F/Gas Mark 2 for approx 2 hours, and have the chicken standing on a baking sheet/large pan to catch any juices/spillages!
- You will probably need to remove all the racks, and then sit the chicken in the pan at the bottom of the oven.
- Don’t worry about putting a bucket (!) in the oven, just sure you baste during the cooking process.
- To check the chicken is cooked, use the normal practice of checking at the widest point of the leg with a knife or skewer and look for clear juices.

INGREDIENTS
- 1 medium Laverstoke Park 1.4kg/3lb chicken Buy Now
- 200mls/7floz oyster sauce to baste (you will not need this amount to cook in the oven)
- 15mls/1 tablespoon soy sauce
- 2 peeled cloves garlic to fit in the can
- 1 peeled and sliced head of ginger to fit in the can
- 50gms/2ozs butter pushed under the skin of the chicken
- Freshly ground salt and pepper
- 1 large can of beer
