Like beef fillet steak, this is the most tender and mild of all the cuts. Buffalo is very similar to beef with a slightly darker colour and more meaty flavour.

Just keep an eye on the heat, as buffalo is very lean so it needs more gentle cooking.

The steak was panfried with a light dusting of black pepper. I like my steak medium and cooked 3 mins per side as directed I've never had Buffalo meat before and I thought it much nicer than beef. I liked the delicate meaty flavour and the tenderness of the meat.
Now I have found Laverstoke park Farm I will not be purchasing meat from anywhere else

So tasty & tender, just cook until pink and it melts in you mouth. Every bit as good as beef fillet steak.
3 minutes each side on a very hot cast-iron griddle, allowed to settle for 3 minutes.....absolutely sublime, melt in the mouth, best fillet of any kind I've ever eaten & that includes some of the best from Argentina
