New to our cuts of buffalo steaks is the large fillet cut (more associated with beef) known as Chateaubriand. It's a cut that's made for sharing, which can be served like traditional Chateaubriand in a wine and shallot sauce.
The cut takes its name from Vicomte François-René de Chateaubriand, whose personal chef served him the dish in his honour.
