Why does our pork taste so spectacular? Firstly our breeds are all slow-growing varieties, bred for flavour rather than size or to suit the interests of big business. Secondly they live their entire lives on our unique pastures planted with 31 grasses herbs and clovers. The result is an incredible savoury, rich and meaty flavour with a light, succulent texture – far superior to any modern-day pork. This joint comes to you hand tied with string and ready scored to encourage crispy crackling.
Our rare and ancient breeds are often darker than modern day pigs. We remove all hairs, but some black hair tips may be visible on the skin.
